PUFFED PASTRY SURPRISE!!!!

If you are like me, it's hard to find healthy foods that all the picky eaters at home will eat. I find myself stuck in a rut trying to make everyone happy. The end result can be both boring and creatively stifling. So, I decided to get sneaky.
Here's what I did. I wanted to show them all that seafood is not a bad thing. So, I got some salmon, puffed pastry, mushrooms and black and green olives. I put together the following dinner and told them it was "puffed pastry surprise". Even my 6 year old loved it. I had to give myself kudos.....They had no idea!!!
Here's the recipe: serves 4
4 4oz. portions of salmon
1 pound mushrooms finely chopped
1/2 can of black olives finely chopped
about 1/4 cup of green olives finely chopped
1/4 cup of cream
1 sheet of puffed pastry defrosted and cut in 4
1 egg beaten
salt and pepper to taste
Start by sauteeing the mushrooms until all the liquid has evaporated (about 10 minutes) add cream enough to cover mushrooms and reduce till thick, add chopped olives and salt and pepper to taste ( green olives are salty so be careful)
Set aside to cool... Meanwhile, on a lightly floured cutting board or counter roll out each sheet of pastry until it is about 1/2 half the original thickness.
Assembly:
spread a thin amount of the mushroom/olive mix on center of the pastry to make a nice "bed" for the salmon to lay on. Place the salmon on top and wrap the pastry all around it (to hold fold down, just dab a little of the beaten egg on the seam). Once you have all 4 salmons wrapped, brush with egg wash and bake at 375 degrees for approximately 20 minutes ( this will vary from oven to oven, so just start checking it at 15 minutes) The pastry should be golden brown and slightly "puffed"
Serve with your favorite rice and veggies.
