CHICKEN ALA KING
I love this recipe because it is so easy and if you already have any leftover cooked chicken it is fast too.
Here's what you will need: serves 4-5 people
CHICKEN: if already cooked about 2 cups....if you are cooking it use 4-5 legs/thighs or 4 large breasts in a sauce pan cover with water add 2 small pinches of thyme, 1 tsp. each onion and garlic powder, 1 bay leaf and 1 tsp each of salt and pepper- simmer for about 30 minutes or until chicken is cooked all the way through. Remove from pan and allow to cool... be sure and save 1 cup of the cooking liquid for latter. Once the chicken has cooled remove from bones and cut in cubes or shred.
1 can of low sodium/fat cream of chicken soup
1 cup of chicken broth or the reserved cooking liquid
1/2 cup of milk (2%, skim or soy)
2 tsp. of corn starch
2 cups of frozen peas and carrots
2 to 3 cups of cooked rice
In a 2 quart sauce pan stir together soup and the cup of broth or reserved cooking liquid and bring to a boil. Combine the milk and cornstarch and add to soup mix stirring well, add the peas and carrots and bring back to a simmer, reduce heat to medium and add chicken. Simmer for 10 minutes and serve over rice. Instead of rice you can use biscuits, puffed pastry shells, couscous or anything that sounds good to you.
